So this is a super simple recipe I recently discovered that is quick, easy and delicious. Back when quarantine was starting and I wasn’t sure when I’d get to the grocery store again, I bought some random frozen fish, including barramundi, which is cleverly branded as “the sustainable sea bass.”

Of course, I immediately thought of “Sea Bass” from Dumb and Dumber.

And fortunately, this fish is indeed much more agreeable than that guy. Anyway, it’s packed with Omega 3s, which are super good for you, and is also quite tasty. I served this with a nice risotto (recipe to come) and some brocolini. It would pair well with most anything.

You will need:

  • 2 barramundi filets
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2-5 cloves of garlic, minced (I offer a garlic range depending on how much you like garlic. I ususally go 5-∞ garlic cloves.)
  • Juice from one lemon, or about 2 tabespoons of bottled lemon juice
  • splash of white wine
  • 1 tablespoon basil (chopped fresh basil leafs preferred, but the dried stuff works too.)
  • salt and pepper to taste

           

What you do:

  • Drizzle a little olive oil on both sides of the barramundi filet, and sprinkle salt and pepper.
  • Heat a medium frying pan over medium high heat, and add the olive oil and butter. As the butter melts add in the minced garlic and stir. Heat for a minute or so, until fragrant.
  • Add in the lemon juice, splash of white wine, about half of the basil, and a little salt and pepper. Stir and allow to cook for about a minute.
  • Put in the barramundi and cook for about 3 minutes. Flip, and cook the other side for about 3 minutes as well, until cooked through.
  • Remove the fish to a serving plate. Add the rest of the basil to the pan and mix for a few seconds, and then drizzle remaining sauce over the fish.
  • Serve and enjoy!
