Tangy, summery and delicious, I love this very simple green salsa. I like to grill the makings when possible, but this also works very well in the oven.
You will need:
- 6-8 tomatillos, husks removed
- 4-6 cloves of garlic, coarsly chopped
- 1 small yellow or white onion, coarsly chopped
- Olive oil
- salt and pepper to taste

What you do:
- Quarter the tomatillos, and mix them together with chopped onions and garlic on a sheet of foil.
- Drizzle liberally with olive oil, then add salt and pepper, and toss together.
- Put the mix on the grill or in an oven, preheated to 400 degrees.
- Let it cook for about 25 minutes, until the tomatillos are very soft.
- Remove from the grill or oven, and let cool for a couple of minutes.
- Put the mix into a blender or food processor and pulse until smooth.
- You can serve it immediately warm (great on eggs), but I’d suggest refrigerating it for a few hours.
- Serve with chips or use on tacos, eggs, or anything you like.
